It was a matter of growing out of the space. I was using my father’s kitchen at night. And I was doing pretty much everything myself. It was like: Order it. Measure it. Bake it. Sell it. No sleep

Starting Say Cheese was initially a joke. We thought it would be hilarious to open a food truck selling only grilled cheese. The more we delved into the nuts and bolts of the business, we realized there was really something there. Since then, we’ve been flexing our creative muscles.

Rocco Whalen drove to Philadelphia from Cleveland in ShortRib1, the Fahrenheit food truck, to take part in May Industry Night at Alla Spina. The don’t-miss slate of offerings includes kimchi dogs, Thai chicken meatballs and a pork belly BLT.

I was nuts about Return of the Mac, a classic grilled cheese with buttery slices of thick white bread, and a twist: In addition to the cheese, the sandwich was also stuffed with mac and cheese. It’s destined to be a campus classic.

This Saturday, May 4, embrace the spring sunshine at Penn Treaty Park during the Pie In The Sky And Food Truck Festival from noon to 5 p.m

It’s the “trucker’s” moment in Philadelphia’s food world now – especially when it comes to lunch. That’s when some of the area’s most exciting new food options are making the scene, rolling in on four wheels with a griddle full of creativity and an entrepreneurial dream.

The new trucks will be seen on Wednesday each week, and the hours have been extended to include breakfast shift as well as lunch. The food truck trend is growing exponentially each year, and shows no signs of slowing down.

Poi Dog plate lunches will set you back around $6 and include an entrée – such as smoky Kalua pork or sweet and savory Shoyu chicken – two scoops of white rice and a side of macaroni salad. There are occasional limited-run entrées; we really dug the special-order Mochi Nori chicken, fried with the classic Japanese rice cake and seaweed.

This Saturday, when the sun is shining and you are fighting the urge to just hop in a car and go to the shore, why not steer those wheels over towards Penn Treaty Park, where the Pie in the Sky Kite & Food Truck Festival will be going on in the most perfect of weather conditions.
