Minnesotans Deb and Les Wille were looking for an ‘off-season’ opportunity to complement their existing horizontal drilling business. Combining their love of food and motorcycles, they landed on a food truck concept called Wild Wille’s Sandwich Shack.
There are a couple of clues that the mobile kitchen parked every Thursday at lunchtime on Payne Avenue on St. Paul’s East Side this summer isn’t just another food truck.
After a successful run in May, Harriet Brewing is bringing back another food truck rally, dubbed the Summer Sampler and set for August 9.
Green + The Grain also serves Cloud Top organic signature tart frozen yogurt with an assortment of toppings, including fresh berries, organic granola and several other healthier options.
More than 40 food trucks will feature their special creations with global cuisines ranging from Indian to Japanese to locally grown pork.

Vellee Deli officially starts serving its fare tonight at 6 p.m. but going forward its hours will be Thursday through Sunday from 5 – 10 p.m. The pop-up will be open through the winter months until the food truck season kicks up again in the spring.
The food truck would allow the city to offer healthier options like frozen yogurt, fruit smoothies, grilled selections and chicken wraps from the Community Center. The city could also work with local farmers to provide some of the produce
The truck will sell gourmet grilled cheese sandwiches that pair with specialty dipping sauces and soups. (Think ketchup aioli with a cheese curd sandwich or traditional tomato soup with a caprese salad grilled cheese.)
