<p style="text-align: justify;"> <strong>Bangor -</strong> Thursday March 28th, Chris and Kirsten Pilot of the Cielos Lunch Truck stopped by and showed us how they make their burritos, burrito bowls, and guacamole. The burritos are filled with shredded beef, steak and chicken.</p>
<p style="text-align: justify;">Starting Thursday April 4th, the truck will be back taking lunch orders in the K-Mart parking lot on Hogan Road in Bangor.</p>

<p style="text-align: justify;">There’s been a lot of talk of food trucks in Maine in recent months — between Portland’s strict regulations on the kitchens-on-wheels and the Food Network’s “Great Food Truck Race” stop in Maine a few weeks ago. Bangor’s been bitten by the food truck bug, too, as chef Kim Smith unveiled her truck, Street Bistro, last week.</p>
<p style="text-align: justify;">Smith formerly owned and operated the Unbridled Bistro and Bennett’s Market, located in two locations on Main Street in Bangor. They closed up shop last spring, and Smith took a year off to retool her culinary attitude — the end result being her food truck.</p>
<p style="text-align: justify;">“I wanted to try something different, so my husband and I bought a Snap-on truck, gutted it and built a kitchen inside,” said Smith. “So far, so good. It’s a lot of fun.”</p>
<p style="text-align: justify;">Smith’s cooking combines a variety of traditions, from French to Tex-Mex and Thai to American, and it’s reflected in her menu items. Tuesdays, there are gourmet tacos such as beef short ribs with blueberry and braised pork with coconut rice. Other days, there are mini meatloafs, cornbread and truffle fries. She makes a mean crab BLT, too.</p>
<p style="text-align: justify;">“It’s always going to be a little different,” Smith said. “We’ll keep switching it up.”</p>
<p style="text-align: justify;">For now, Street Bistro will be located behind the parking garage in downtown Bangor from 11 a.m. to 2 p.m. Tuesdays and Wednesdays, at the Outdoor Market in downtown Bangor on Thursdays from 5 to 8 p.m., and at the Hampden Farmers Market from 2 to 6 p.m. on Fridays. It’s also available for events, including weddings and reunions, and certain festivals. <p style="text-align: justify;">The city now has its first lunch truck making its way around downtown but it is not serving your typical foods.</p>
<p style="text-align: justify;">The &#8216;Street Bistro&#8217; is run by chef Kim Smith and her daughter Colby Bennett. The two have been offering options like salmon tacos and escargot bites for people looking for a new twist on lunch. Smith got her start in food growing up in a French restaurant. Her truck already is drawing dozens customers during the days it&#8217;s parked downtown.</p>
<p style="text-align: justify;">She says it&#8217;s all about taking the taste of a gourmet restaurant  down to the street.</p>
<p style="text-align: justify;">&#8220;It gets people talking and sharing and seeing,&#8221; she said, &#8220;and they don&#8217;t have to sit down and be where they don&#8217;t fit in. It&#8217;s a lot more fun&#8230;and they&#8217;re getting it for half the <a id="itxthook1" href="http://www.wcsh6.com/news/article/206352/2/New-lunch-truck-providing-gourmet-eats-in-downtown-Bangor#" rel="nofollow">price</a>&#8230;so it makes it kind of fun.&#8221;</p>
<p style="text-align: justify;">Smith and her daughter say that they are already gaining a following on <a id="itxthook2" href="http://www.wcsh6.com/news/article/206352/2/New-lunch-truck-providing-gourmet-eats-in-downtown-Bangor#" rel="nofollow">Facebook</a> and Twitter where they are getting feedback and taking suggestions for future offerings.</p>
