Two months ago, we wrote about how the national food cart trend has largely bypassed Idaho.

“It’s called Archie’s Place after my two-year-old son Archie.”

The punlicious truck will make its official debut at the Meridian Urban Market on Thursday, May 5, serving chile relleno with roasted tomatillo salsa in honor of Cinco de Mayo.

Gernika veteran Jason Farber told BW today that he’s about a month out from opening up Archie’s Place, a food truck specializing in the tomato sauce and ground beef sandwich.

Food trucks and carts, especially those with a narrow culinary focus like that of Portuguese Lunch Wagon, are the foodie world’s hottest potatoes these days.
